茨城県土浦市334年続く老舗醸造蔵内を17代当主様直々にご案内いただきました。
醤油を「紫」や「おひたち」と言う語源や醤油蔵の「亀甲」マーク発祥地も実は此方なのです。
醤油も其々に材料だけでなく製法や熟成に火入れ等で個性が生まれ、合わせる料理によって使い分ける楽しみも見えて来ました!
樽職人も日本に残り1軒だそうで此処が無くなると樽仕込みも消えてしまうのかもしれません(木樽の寿命は約150年だそうです。)お忙しい中をご案内いただきまして柴沼会長ありがとうございましたm(_ _)m
